マンゴーやパパイヤのトロピカルな香り。ほのかにヨーグルトのニュアンス。程よい酸が支え、パパイヤの果実味が広がり、余韻に心地よいヨーグルト感。

山形県南陽市に拠点を構える自然派ワイナリー。気候・地勢・土壌に人や文化まで含めた“テロワール”を重視し、除草剤・殺虫剤・肥料・酸化防止剤を使わず天然酵母のみで醸造。スペイン製陶器アンフォラ17基で発酵し、ブドウ本来の力を映す。2015年から有機栽培を開始し、耕作放棄地の再生と新規就農者の支援に取り組み、“ぶどう共和国＝GRAPE REPUBLIC”の実現を目指している。
