●ワイナリーについて（パトリック・サリヴァン）
パトリック・サリヴァンはヴィクトリア州ヒースコートの農園で生まれ、畑やワインに囲まれて育ちました。
畜産場での労働やロンドンでの経験を経て、帰国後アデレード大学とメルボルン大学で醸造学と栽培学を修めました。
彼の哲学は「醸造学よりも栽培学が重要」。畑での徹底した管理（剪定、リーフシンニングなど）を重視し、ブドウの個性を最大限に表現します。
サウザンド・キャンドルズ農園で栽培を担いながら、自身の名義でもワインを醸造。シーズンオフにはボージョレやシチリアでも経験を重ねています。
自然派の枠を超え、誠実かつ挑戦的なスタイルで世界中のナチュラルワインシーンから注目を浴びる存在です。

Patrick Sullivan was born in Heathcote, Victoria, surrounded by vineyards. After working in abattoirs and immersing himself in London’s wine scene, he returned to Australia and studied viticulture. His philosophy prioritizes the vineyard—pruning, canopy management, and constant presence—over winemaking science, aiming to honestly reflect the site. Patrick managed vineyards at Thousand Candles in the Yarra Valley alongside iconic viticulturist Stuart Proud and worked closely with winemaker Bill Downie. Today, with his wife Megan, he produces wines that balance raw energy and authenticity, admired worldwide for their honest expression and bold character.
